2 cups small tomatoes, halved
1/4 cup light olive oil
3 cloves garlic, minced
9 basil leaves, sliced in ribbons

1/2 teaspoon kosher salt

1/4 teaspoon black pepper
3/4 cup grated parmesan cheese
1/2 pound dried rotini pasta
2 tablespoons unsalted butter
1 tablespoon olive oil
Baby spinach leaves, torn

How It’s Made
Combine the halved tomatoes, olive oil, garlic, basil, red pepper flakes, salt, and pepper in a medium bowl. Toss gently so all the ingredients are coated evenly. Let sit at room temperature for at least 30 minutes or overnight to allow the flavors to meld.
